Macarons & cake with condensed milk, cherries and chocolate mousse.


Gdyby ktoś zapytał co ze słodyczy lubię najbardziej,
bez wątpienia odpowiedziałabym:
makaroniki, czekoladę i kajmak.

Mogłabym je jeść i jeść (co jest niezwykle niebezpieczne, dlatego staram się ograniczać :-)

Przepisy w tym poście to kombinacja moich ulubionych składników.
Dodatkowo wiśnie, bo pysznie komponują się z czekoladą.

Zjadłam niebezpieczenie dużo, ale wygląda na to, że na długo będzie mi to musiało wystarczyć.

If someone asked me what my favourite sweets were,
I would answer without doubt:
macarons, chocolate and condensed milk.

I could eat it a lot (which is extremely dangerous, and that's why I try to limit myself :-)

Recipes in this post consist of my favourite ingredients.
And cherries, because the fruit flavor goes perfectly with chocolate.

I ate dangerously much, but it seems, that it will have to be enough for me for a long time.

Macarons:

90g białek
25g cukru
200g cukru pudru
szczypta soli
100g mąki migdałowej

ganache:
200g czekolady
125ml śmietanki 30%

Białka odseparować od żółtek i zamrozić. 
Wyłożyć z lodówki 24-48godz. (można i na trzy dni) przed robieniem makaroników.
Migdały i cukier puder zmiksować na bardzo, bardzo drobno (najlepiej w młynku do kawy).
Białka ubić, początkowo ze szczyptą soli, potem dodając połowę cukru. Na koniec wsypać cukier do końca i dalej ubijać. Ubijanie powinno zająć ok. 5min. (nie więcej!).
Do ubitych białek dodawać migdały w 3porcjach. Na początku mieszać delikatnie, a potem wziąć taką szpatułkę i mieszać zgodnie z ruchem wskazówek zegara, a kiedy zatoczymy koło, ugnieść masę. Powtórzyć ok.50razy, aż masa będzie gładka i dość gęsta.
Przełożyć masę do rękawa cukierniczego z końcówką o średnicy 1cm.
Wyciskać makaroniki na blachę z papierem do pieczenia (choć ja używam teflonowego, bo makaroniki lepiej odchodzą). Potrząsną i postukać w spód blachy, aby makaroniki stały się gładkie, bez żadnych uwypukleń na wierzchu.
Odstawić na 30min., aby się wysuszyły. Kiedy dotkniecie ich wierzchu lekko palcem, i makaroniki się nie zapadną, a będą „sprężyste”, to znaczy, że są gotowe.
Włożyć do nagrzanego do 140°C piekarnika. Piec 10min., przekręcić o 180° i piec jeszcze 5min.
Ostudzić, zrobić masę ganache:  czekoladę pokruszyć. Zagotować śmietankę, zalać nią czekoladę. Odczekać 2-3minuty i wymieszać dokładnie. Wstawić do lodówki aż masa stanie się gęsta.
Nakładać masę na jedną część makaronika, przykrywać drugim.

Macarons

90g egg whites (use eggs whites that have been frozen and then defrozen and preferably left 3-5 days in the fridge, covered or 24-36hrs at room temperature, covered)
25g granulated sugar
200g powdered sugar
100g almond flour
pinch of salt

In a stand mixer fitted with the whisk attachment, whip the egg whites to a foam, (think bubble bath foam) gradually add the sugar until you obtain a glossy meringue (think shaving cream). Do not overbeat your meringue or it will be too dry. Place the powdered sugar and almonds in a food processor and give them a good pulse until the nuts are finely ground. Add them to the meringue, give it a quick fold to break some of the air and then fold the mass carefully until you obtain a batter that falls back on itself after counting to 10. Give quick strokes at first to break the mass and slow down. The whole process should not take more than 50 strokes. Test a small amount on a plate: if the tops flattens on its own you are good to go. If there is a small beak, give the batter a couple of turns.
Fill a pastry bag fitted with a plain tip with the batter and pipe small rounds (1cm in diameter) onto parchment paper or silicone mats lined baking sheets. Let the macarons sit out for 30 minutes to an hour to harden their shells a bit. In the meantime, preheat the oven to 140C. When ready, bake for 15minutes. Let cool. Once baked and if you are not using them right away, store them in an airtight container out of the fridge for a couple of days or in the freezer.
Prepare ganache: Crumble 100g chocolate. Boil 100ml cream and pour the chocolate. Wait 2-3minutes and stir until you get a smooth mixture. Let it cool in the fridge. Put a bit on the bottom of one macaron and sandwich with another.

Ten Tort

biszkopt:
(należy pamiętać - składniki o temp. pokojowej)
4 jaja + 1 białko
szczypta soli
1/2 szkl. cukru (100g)
cukier waniliowy (8g)
1łyżka letniej wody
150g maki pszennej
1/2 łyżeczki proszku do pieczenia + 1/2łyżeczki sody
2łyżki kakao (20g)

Oddzielić białka od żółtek i ubić (początkowo z odrobiną soli, pod koniec dodać połowę- 50g- cukru).
Żółtka utrzeć z resztą cukru i cukrem waniliowym, dodając na początku łyżkę wody.
Do żółtek przesiać mąkę, proszek do pieczenia i sodę oraz kakao, dodawać na zmianę z ubitymi białkami.
Wymieszać delikatnie, ale dokładnie.
Wylać do tortownicy (śr. 24cm).
Piec w 175st. C przez 30min.
Wyjąć, spuścić z 6cm na ziemię w foremce, włożyć z powrotem do piekarnika i ostudzić przy uchylonych drzwiczkach.
Przekroić na dwa blaty.
Namoczyć 2filiżankami soku z wiśni (z kompotu).

mus czekoladowy
100g cukru
2 jaja(oddzielnie żółtka i białka) + 2żółtka
1łyżka kakao
125ml śmietanki kremówki
75g masła
200g gorzkiej czekolady
aromat rumowy
200g wiśni z syropu

Wsypać do metalowej miski 3łyżki cukru, dodać cztery żółtka, kakao i śmietankę. Miskę umieścić na garnku z gotującą się wodą. Mieszać drewnianą łyżką aż masa zgęstnieje i zacznie przyklejać się do łyżki(trwa to dobrą chwilę, masa musi naprawdę zgęstnieć, przypominać w konsystencji budyń). Zdjąć miskę z garnka, dodać pokrojone w kostkę masło i czekoladę. Mieszać składniki aż się roztopią i ze sobą połączą. Dodać alkohol, a następnie połączyć z białkami ubitymi na sztywną masę(najpierw bez cukru, a po lekkim ubiciu z dodatkiem pozostałego cukru). Wymieszać mus z wiśniami.

+ puszka mleka skondensowanego (gotować całkowicie zanurzoną w wodzie przez 2,5godziny)
dżem wiśniowy

Na jeden z nasączonych blatów ciasta rozsmarować połowę dżemu. Przełożyć do foremki z odpinaną obręczą.
Na to wylać gotową masę kajmakową. Rozsmarować połowę musu z wiśniami.
Przykryć drugim blatem biszkoptowym. Wyłożyć resztę dżemu a na to mus.
Wstawić do lodówki na kilka godzin, aż mus całkowicie stężeje.
Przygotować masę z białek.

310g cukru
140g wody
łyżka soku z cytryny

150g(5) białek
szczypta soli

Włożyć wodę, cukier i sok cytrynowy do garnka, zagotować. Zmniejszyć gaz do minimum, przykryć garnek przykrywką i gotować tak przez 3min.

Odkryć garnek i gotować do uzyskania struktury "soft ball" (struktura "soft ball", oznacza, że jeśli nabierzemy łyżką odrobię gotującego się syropu i spuścimy go do szklanki z bardzo zimną wodą, to będziemy mogli uformować w wodzie małe kuleczki z tego syropu, a wykładając rękę z wody, kuleczka rozpłaszczy nam się.). Często mieszać.

Zacząć ubijać białka, początkowo ze szczyptą soli, a kiedy syrop będzie już gotowy, powoli wlewać gorący do białek, które cały czas należy miksować.
Kontynuować ubijanie aż masa stanie się zimna.
Rozsmarować na gotowym cieście.
Udekorować wedle uznania.

Cake with chocolate mousse, cherries and condensed milk

sponge cake:
4eggs + 1egg white
100g sugar (1/2 glass)
150g flour (3/4 glass)
1 tablespoon water
1 teaspoon baking powder
pinch of salt
2 tablespoon cocoa

Beat the egg whites, first without sugar, only with salt. After the whites form soft peaks, add half of sugar. Beat until they form stiff, shiny peaks. In another bowl beat the egg yolks with the rest of sugar until mixture is thick, pale yellow and forms a thick ribbon when the beaters are lifted a few inches above the batter. Using a large rubber spatula, stir about 1/4 of the beaten whites into the egg yolk mixture, then fold in the remainder, leaving a few wisps of white visible. Combine the flour, cocoa and baking powder. Sift half the flour over the eggs, and fold in; repeat with the remaining flour. Pour the batter into the prepared half sheet pan and bake for 20 to 25 minutes or until slightly brown at 175°C.
Set aside until cool.
Cut the cake into two parts, horizontally.
Prepare a strong tea, a half of a glass (or a cherry syrup) Add rum aroma, teaspoon of sugar and lemon juice.
Soak the cake in the liquid.

dark mousse:
100g sugar
2eggs (whites and yolks separately) + 2 egg yolks
1 tablespoon cocoa
125ml creme fraiche (creme 30%fat)
75g butter
200g dark chocolate
rum aroma
200g cherries from a syrup

Pour 2 tablespoons of prepared sugar into a bowl, add 4 egg yolks, cocoa and creme fraiche. Put the bowl onto the saucepan with boiling water. Stir constantly with a wooden spoon until you get a tick, pudding- remanding mixture. Set aside, add chopped butter and chocolate. Mix till smooth.
Pour aroma and beaten egg whites (first without sugar, then after having got soft peaks, add the sugar and beat until glossy peaks.). Mix gently but precisely with the cherries.
Put into a fridge for night or to a freezer if you need it to be done quickly.

+ Condensed milk (boil covered in the water for 2,5 hours)
cherry jam

Spread the half of the jam and half of the cake. Pour the condensed milk and then spread half of the mousse.
Sandwich with the second cake. Spread the rest of the jam and then the mousse.
Put in the fridge for a couple of hours.

Prepare the Italian meringue:

Italian meringue:
11 oz. sugar (~310 grams)
5 oz. water (~140 grams)
150 gr egg whites (~5 egg whites)
1teaspoon lemon juice

Combine water, lemon juice and sugar in a small pot over medium-high heat. Without stirring, bring to a boil and let cook until the soft balls.
Meanwhile, place the egg whites in a mixer bowl. With the whisk attachment, begin whisking the egg whites when the syrup begins to bubble on the stove. Start whisking on medium low until the whites begin to foam all over, then increase speed to medium high. Whisk until medium stiff peaks form and stop.
Once the syrup has reached soft ball stage and the whites have been whipped to soft peaks, gradually pour the syrup in a small stream into the egg whites, whisking on medium high continuously. Be careful not to allow the sugar syrup to fall on the beaters.
Continue whisking until the bowl of the mixer is at body temperature and not warm to the touch anymore.
Unmold the cake and frost the outside of the cake with meringue. 
Serve at room temperature but store in the refrigerator.

  3. Pysznie wyglądają! Ja raz już robiłam makaroniki, ale troszkę za gęsta miałam masę i wyszły mi z takimi małymi dzióbkami. Ale patrząc na Twoje mam ochotę znowu podjąć wyzwanie :)
