Pychotka!

Coś dla wielbicieli ciast z kremem.
Trochę jak zapleśniak - kruche ciasto, dżem i beza.
Przełożone masą budyniową. Posypane płatkami migdałowymi.

Something for those, who like custard pies.
A bit like zapleśniak - crust, jam and meringue.
Filled with a pudding cream. Sprinkled with almond flakes.

Pychotka

kruche ciasto:
500 g mąki pszennej 
1,5 łyżeczki proszku do pieczenia
pół szklanki cukru
200 g masła 
6 żółtek
3 łyżki gęstej śmietany (100g)
Wszystkie składniki wyrobić. Powstałe ciasto zagnieść w kulę i podzielić na pół.

beza:
8 białek (6 bialek z ciasta + 2 z kremu)
1 szklanka drobnego cukru 
1 łyżka mąki ziemniaczanej
Białka ubić na sztywną pianę. Następnie dodawać stopniowo (to bardzo ważne) i małymi partiami cukier. Na koniec dodać mąkę ziemniaczaną, delikatnie wymieszać.

+ 1 słoiczek dżemu z czarnej porzeczki (450 g) 
120 g płatków migdałowych

Formę o wymiarach 25 x 33 cm wyłożyć papierem do pieczenia. Jedną część ciasta wyłożyć na spód, rozwałkować i wyrównać. Na nim posmarować połowę dżemu z czarnej porzeczki. Następnie wyłożyć połowę masy bezowej. Na masę bezową wysypać połowę płatków migdałowych. Piec w temperaturze 175ºC przez około 40 minut. Identycznie postąpić z drugą częścią ciasta. Można obydwa placki piec razem w piekarniku (w termoobiegu) lub jeden po drugim (jeśli nie mamy dwóch takich samych form); wtedy najlepiej drugą drugą bezę przygotować bezpośrednio przed pieczeniem. Placki ostudzić.

masa kremowa:
2 szklanki mleka (500 ml)
3 łyżki mąki pszennej
2 łyżki mąki ziemniaczanej
2 żółtka
3 łyżki cukru
16 g cukru waniliowego
250 g miekkiego masła
kilka kropel aromatu migdałowego
można dodać również 2-3 łyżki Amaretto (niekoniecznie)
Jedną szklankę mleka zagotować z cukrami. Drugą zmiksować z żółtkami i mąką (jak na budyń), dodać do gotującego się mleka, zagotować. Ostudzić, przykrywając folią spożywczą.
Miękkie masło utrzeć na puch (można mikserem), stopniowo dodawać ostudzony budyń, cały czas ucierając (miksując). Dodać aromat migdałowy i zmiksować.
Upieczone i ostudzone placki przełożyć masą kremową. Schłodzić minimum 3 godziny w lodówce.

Delicious cake

the crust:
500g flour
1,5 teaspoon baking powder
1/2 cup sugar
200g butter
6 egg yolks
3 teaspoons sour cream (100g)
Divide ingredients in two. Sieve flour into a bowl. Using a knife, mix grated butter into flour. Beat the egg yolks with sugar until mixture is thick, pale yellow and forms a thick ribbon when the beaters are lifted a few inches above the batter. Pour the cream and aroma, mix. Combine flour and egg yolks together. Shape dough into a ball and flatten into a disc. Wrap with plastic wrap and refrigerate for two hours or overnight. Make the second one in the same way. Place the dough in between two sheets of plastic wrap or parchment paper and roll it out. Place the first half of the dough in a tart pan, trim the edges. Prick the dough with a fork.
Spread the half of the jam and half of the meringue batter. Sprinkle with almonds. Bake in 175ºC for 40 min.
Do the same with the second part of the dough, jam and meringue.
Set aside and let cool.

meringue:
8 eggwhites (6 from the dough + 2 from the cream)
1 cup sugar
1 tablespoon potatostarch
beat the egg whites until they begin to foam with a pinch of salt. 
As the foam continues to build, you can turn the speed to medium and then high, adding the sugar.
Beat until the foam forms stiff, glossy peaks. With a rubber spatula, fold in potatostarch.

+ 1 blackcurrant jam jar (450 g)
120 g almond flakes

cream:
2 cups milk (500 ml)
3 tablespoons flour
2 tablespoons potatostarch
2 egg yolks
3 tablespoons sugar
16 g vanilla sugar
250 g soft butter
almond aroma
2-3 tablespoons Amaretto (optional)
1 cup milk boil with the sugar. The second cup mix with the egg yolks and flour. Pour into the boiling milk and boil again. Let it cool, wrap with the clingfilm. The soft butter mix untill fluffy. Add the pudding, constantly mixing. Put in the aroma and combine together.
Spill the cream upon the cake. Sandwich the other cake on the top.
Put into a fridge for night.

  5. U nas je się cos podobnego, ale zamiast kruchego ciasta sa warstwy z krakersow :) tez pychotka :)
