Coconut macaroons & Boterkoek.




Dość długo mnie tu nie było, ale powiem jedno - przerwy w pieczeniu nie miałam :-)
Piekłam dla znajomych. Starałam się wykorzystywać przepisy, które już są na moim blogu.
Oczywiści nie obyło się bez małych konfiguracji :-)

Pączki na Nowy Rok to tradycja w Holandii. Usmażyłam więc pączki głównie na smak holenderski - bez lukru, ani marmolady różanej, ale za to z dużą ilością rodzynek
Robiłam go 3-4 razy pod koniec tamtego roku.
Na początku tego natomiast, też go wykorzystałam, ale zamiast gruszek użyłam dżemu wiśniowego, do biszkoptu dodałam trochę kakao, a masę mascarpone zrobiłam bez białej czekolady, ale za to z ubitą śmietanką.
Znów wyszło przepysznie :-)

W tym poście dwa przepisy.
Jeden - na kokosanki - już kiedyś tu zaistniał. Ale ten wygrywa zawody :-) Mimo, że nazwa taka sama,
to sposób wykonania zupełnie inny. 
A kolejna słodycz to ciasto holenderskie. Nazywane tu Boterkoek i jak sama nazwa wskazuje - maślane.
Muszę powiedzieć, że nawet bardzo maślane - na ćwierć kilo mąki tyle samo masła.
Jednak dzięki temu ciasto jest tak specyficzne...rozpływa się w buzi i pachnie migdałami....

I haven’t been here for quite a long time, but I didn’t have any break in baking desserts during that time :-)
I baked for my friends. I tried to use the recipes from this blog. 
Of course I couldn’t help making a few improvements :-)

Oilbolls(or donuts) are the traditional sweets for New Year’s Eve in Holland. 
I made most of them into a Dutch taste – without the icing, nor jam, but with lots of raisins.
Pear layer cake with chocolate mousse and mascarpone became a hit. I baked it 3-4 times at the end of the previous year.
At the beginning of this year I also used this recipe, but including some changes. Instead of pears – a cherry jam; to the sponge cake – a bit of cocoa; and mascarpone layer without white chocolate, but with a whipped cream.
Delicious :-)

There are two recipes in this post.
The first one – coconut cookies – was posted  here once. But this one wins the race :-) Despite the fact that both of them have the same name, each of them is made in a different way.
The other recipe is a Dutch cake called Boterkoek. As the name indicates – there is much butter in it.  But because of it, the cake is so special... So soft and smelling of almonds...



Kokosanki

4białka
szklanka cukru
szczypta soli
250-300g wiórek kokosowych
2łyżeczki mąki ziemniaczanej
łyżeczka soku z cytryny
skórka z jednej cytryny

Ubić białka - początkowo z dodatkiem szczypty soli, a po lekkim ubiciu dodać cukier.
Białka będą gotowe, kiedy masa będzie lśniąca i sztywna.
Dodać wiórki, mąkę, skórkę i sok z cytryny.
Wymieszać dokładnie.
Formować ciastka na blaszce wyłożonej papierem do pieczenia.
Piec 15min. w 165°C.

Coconut macaroons

4 egg whites
1cup sugar
pinch of salt
250-300g desiccated coconut
2 teaspoons potatostarch
1 teaspoon lemon juice
lemon peel

Place the egg whites in a medium bowl and starting at low speed, 
beat the egg whites until they begin to foam with a pinch of salt. 
As the foam continues to build, you can turn the speed to medium and then high, adding the sugar.
Beat until the foam forms stiff, glossy peaks.
With a rubber spatula, fold in coconut, flour, lemon juice and peel .  
Drop coconut by teaspoonfuls about an inch apart onto the prepared baking sheets. 
Bake 15min. in 165°C. 
Carefully remove cookies to rack to cool.

Boterkoek
250g masła
200g cukru (w tym 2torebki po 8g cukru waniliowego)
250g mąki
2jaja
zapach migdałowy
płatki migdałowe

Masło utrzeć z cukrem na puszystą masę. Dodać jajo, wymieszać.
Wsypać mąkę, dolać kilka kropel olejku migdałowego.
Wymieszać na gładką masę.
Foremkę 20x20cm wyłożyć papierem do pieczenia.
Rozłożyć ciasto, wyrównać.
Posmarować roztrzepanym jajkiem.
Widelcem zrobić szlaczki.
Posypać płatkami migdałowymi.
Piec 25min. w 175°C.

Boterkoek
250g butter
200g sugar (including vanilla sugar)
250g flour
2eggs
almond aroma
almond flakes

Using a mixer on medium speed, cream butter and sugar until fluffy.  
Add the egg and flour and aroma; mix until well-combined.
Pour batter into prepared pan and smooth top with spatula or knife. 
Take a bit of a beaten egg and brush that on the top of the cake. Sprinkle with almonds.
Bake 25min. in 175°C until the top in golden brown.

  1. Mówiąc szczerze nie przepadam za kokosowymi słodyczami, ale zdjęcia są bardzo, bardzo apetyczne i mam ochotę ich spróbować.
